How does Chromecast audio work? Can it my my music off itunes in another room, or is other software needed?

It works from streaming services, so Spotify or Google Play Music and things like that (iPlayer radio works, too). Not iTunes or Apple music, unsurprisingly.

Top tip: the Chromecast audio comes with a dedicated PSU and a USB power input. You might be tempted to plug it into any old USB port you have handy to save a plug. Don't do that. Use the PSU it comes with.

Oh, I was going to plug it into the Anker unit by the bed.

You can try it. but if you get a ground loop hum coming through the speakers, switch to the provided PSU instead.

Or you can download the podcasts in iTunes, upload them to Google Play music, and stream them that way. Bit of a fiddle, but it'll work.

Are you sure? I've heard that having to plug phones in is bad on an almost unprecedented level.

I've had AnyCast recommended to me, also. Of course, with either of these solutions, you lose the main benefit of Chromecast over a Bluetooth audio stream, which is that the device is independent from the phone app. To be fair, you don't get that with Apple's AirPlay either.

Call me crazy, but I'm going with wireless audio as the main benefit

Bluetooth audio streams are also wireless, unless you have some crazy low-tech Bluetooth up there in Bedfordshire.

I had Pocket Cast recommended as it syncs with a web page too, so i can listen on multiple devices.
It works with Chrome Cast too
