Well I did it and it was fucking incredible !

Applebees is a restraunt in the USA. I figured maybe a few people would have been there.

Any way, Fiesta lime chicken. It's a bed of shredded tortilla chips. I baked my own and salted them after slicing them.

Then you bake a chicken breast or three that you have marinaded in lime. The sauce? Ranch dressing, light mayo and lime juice. You put the sauce on once the chicken is baked through, then cover it in shredded cheddar and bake til the cheddar goes crisp, then serve over the crispy tortillas and serve with spanish rice.

I have leftover sauce so I will do a cook up write up next time I do it (next tues :D )

Yes, it's lovely. That's the trick tbh. Ranch has a very salty taste similar to a good caesar. So when you add the lime your tastebuds just explode. You get that lovely rich flavour from the ranch and then the lime makes you drool. And with the cheese and tortillas underneath to add some crunch? amazing.

This is what it looks like at Applebees. Mine wasn't browned and I didn't grill the chicken (that's why the cheese didn't go golden brown) but it tasted the same.

BTW I made my own crunchy tortilla strips by slicing up a soft shell tortilla (corn, gotta have that cornbread haha) the salted them and baked in the oven for 5 mins.

You don't need to have stars. They are a very reliable source for fine dining though.

I must have eaten at a poor version of the ubiquitous chain restaurant then. I'm sure all their other chain identikit restaurants serve marvellous hand crafted food with the proper due care and attention.

A lot of these restraunts are franchised. So some are clean, friendly with great food and others are run down shitholes. We had two Ihops local to us and one was a disaster. The tables were never cleaned and the food was burnt and terrible. The other one though? best breakfasts I have ever had. Same with Denys as it goes, one of them had holes in the carpet and the other was immaculate.

Thing is, even in these basic chain corporate type food places you still need a chef with a moderate level of skill. Most don't even hire chefs they just hire "some dude to chuck things on the grill".

The Applebees I went to was in a nice town and put on all kinds of entertainment. But, most importantly the food was excellent and very well cooked and presented. I agree that that's not always the case. I suppose it just depends on individual experience really :)

Applebee's is OK.

It's just one of those standard, cheap and cheerful American chain restaurants. Which, you know, is all you can really get in States anyway.

Hooters is best. I went to Hooters for lunch this afternoon. Spicy boneless Buffalo wings are all good. So are waitresses wearing orange hot pants and really, really tight white tops.

That's about the size of it, they don't really do good food in America, just large portions of high-calorie shit - certainly that's the impression I got from my time there. If you want nice food, you have to make it yourself, or certainly stay well away from any kind of chain restaurant.

Have you tasted their version of chocolate? Fucking hell.

Yeah I agree, it's fucking rank tbh. I remember once I brought a hersheys bar to scan the wrapper. Not wanting to waste it I tried to eat it. I was heaving and gagging after about two bites and it went in the bin. Greasy, bitter foul shit.

As for FLC? it's a mexican dish, applebees only make it and serve it up.

Making this (fiesta lime chicken) tonight. I've got some leftover sour cream which will go into the sauce too for an added tang. Will report my success or hat trick of cooking disaster later.

EDIT: Not bad. Needed to be crispier, will grill it next time.
