Does anyone know how to use, or know of a good guide that teaches, how to use Pen tools in (the myriad of) drawing applications that provide them?

I've never really understood them and always end up with a bunch of bendy looking lines that look almost, but not quite, completely unlike what I intended.

It depends which program you are using really. Photoshop's pen tool is quite different from the one in Illustrator. What program are you using?

Expression Blend - it looks and feels fairly similar to the one in Photoshop (at least I'm as equally cack-handed at using it, and it wouldn't surprise me if Microsoft ripped it off copied one of the more popular tools in order to ease designers from the one to the other).
