For me I think it originally comes from having always played flight sims and stuff. Having it work differently in different games would be weird.

Yeah. It just feels more natural and a bit more immersive to me, you tilt your head back to look up. Having it the other way I can adapt but it just feels more like moving the cursor around than looking.

Why would you invert the X?

For the same reason you invert the Y - You move (the back of) your head left to look right.

It's not a conscious choice to try and map your actual head to the controller or something it's just what feels right. Looking up feels like leaning back but looking left and right just feels like left and right.

Yes. Indeed that's the origin point for me because I was late to the last gen so had never used anything but a mouse for 'looking' in 3D games. Hell, it took me about six months to become even vaguely comfortable using a controller for FPS' and the like.
