Wood is slightly porous and so I was worried it would potentially harbour moisture in a humid London kitchen.

I picked one for her.

Apparently storing your bread within a cloth or brown paper bag WITHIN the bread bin can help, as it acts as a secondary barrier to prevent spores from landing on it, whilst preventing excess humidity.

It seems unlikely to last longer in a breadbin if there's no preservatives in it

I think it’s because out of a bread bin it’s in either something like a bag or plastic container that’s making any moisture in the bread ‘sweat’, plus a container of some sort might help with any environmental bacteria.
