Looks like it's going to be a 6% pale ale! My chiller wouldn't fit in my Big Pot, so I put the hot wort in the fermentation bin, put a lid on it and let it cool overnight. I took the OG this morning and adjusted for temperature, it was 1054. So, I will leave it to ferment, dry hop it with more Goldings, then bottle and bring to BeexBQ. Should be decently matured by then. Timewise, I put the mash on at 1940, and went to bed at 2330.

Capacity increase! Clearing out a house, my friend bought me over a feast of homebrew equipment (and a story about her colleague being shot and stabbed outside her work, he's still alive), including two more fermenting bins. Potentially, could have 90 litres on the go at once now!

Picked up 5kg pale malt today, along with 100g Citra hops and 100g cascade all ready to do a Pale Centennial, Citra, cascade brew. I was about to weigh it all out and then realised it was about 15% cheaper than expected as I didn't buy any yeast.

MaliA's Big Three

5kg maris otter
200g crystal malt
200g biscuit malt

Mash at 66 for an hour and half in 12.5 litres. Continuous sparge at 80 degrees with 12.5l.

50g centennial in at start of boil
20g each of centennial, cascade and citra 5 minutes from end.

I intend to dry hop with 10g of each 3 days before bottling.

1048 was OG, so should be about 5.x%

I don't think it mashed totally, there was some exposed grain. I suspect i will have to increase mash volume to 17 litres, and sparge with 12.5 litres.

Edit: dry hopped with 12g each after11 days

There is a website with a database of receipes one can download into an app. It is only searchable by receipe name. The app has ingredients as defined objects which uses this database. Can i download the database somehow, and search by ingredient?

Currently have 38 to 40 litres in two FVs. One needs bottling on Wednesday after dry hopping with 40g Goldings, yesterday. Second is what I made last night. Bottles are now the rare limiting step. And storage.

I think the American Pale might be ready for when i next see you, too.

I need a more efficient way to bottle as there was a lot of wastage yesterday. I might get a proper bottling bucket, rather than rely on siphons

As before: Making lager means controlling fermentation temp and keeping it down. Currently, to the delight of MrsA, the beer ferments in the fireplace in the dining room. To control the temperature i'd need a fridge big enough to hold the fermenting bin. That would also require power. The dining room is large enough to accomodate a fridge big enough and has power, but it'd be in the middle of the room. I could put it in the garage, but tbe roof leaks (passim) and it's full of push bikes. So, you'll try this fine ale, instead.

Easiest way: Chuck it in a sterilised 25 litre bucket with 1kg brewing sugar, add 23 litres water, stir, add yeast then put on lid and bubble trap. Wait a week or so, add 200g brewing sugar, stir, leave for an hour then siphon into bottles. Store at room temp for a week and then try one.

I've recently been on a lager kick, not sure why. I prefer helles and pilsner to Belgian-style golden lager though (which is all they sell in this country it seems).

Oh, tired of the mess siphoning can cause, I bought a bottling bucket. This is a bucket with a tap and a spring loaded valve on the end of a tube. Add priming sugar to bucket, then siphon beer from fermenting bucket into bottling bucket. Leave to settle. Put the tube in the bottle, push and bottle fills from the bottom. Dead easy, and tidy.

Bittering
30g centennial
20g brewers gold

30g each of citra and cascade in 5 mins from wnd of boil

Dry hop 20g both 3 days before bottling

A tale of two Brews. I'm drinking bottle number 3 of Borgo's 3C whilst wearing a Tshirt with Pinot on it that Kern got me. This is pretty much as cool as you guys can ever dream of. 3C is pretty good. I am proud of it. I prefer it to Watergate. Cras better like Watergate.

In the fermenting bin is 3C Plus One. I was going to call it 4C but 3C was a big enough in joke for me and I dunno if 4C is one better losing biscuit malt and upping the crystal AND swapping a hop. So, 4C isn't a derivation of 3C. And it isn't called 4C. It's callee Afterburner as that's what Chinnyhill suggested after I watched his Chinnyvision of the game.

Edit: it is also a fair bit stronger than expected

Umm. Due to child labour, during dry hopping, about twice as much citra and cascade was added to Afterburner. A very young sample might be available on Saturday, if I bottle wednesday.

Also, I'm trying to get a homebrew friend to try the experimental hops from http://stocksfarm.net/shop/

They invented Jester which is my favourite hop, beating out citra, but they don't sell it to homebrewers the dicks. I think it all goes into the m&s Jester single hop ale which is ace.

The 3C is pretty nice. American ipas use cascade and citra a lot.

I am looking forward to getting some bines in the ground next year - and we'll have a dehydrator by then for other foodstuffs, so no worries about rot losses.
